Thanks for posting comment after making these. I came across this recipe and considering to try it , but all ( and I mean every single one) of the comments about how great these are from people who did not make them. I find it to be a case for most of the blog recipes. Wish people were commenting on the actual recipe taste rather than posting the comment about the look 🙂 . Thanks for sharing. I will give it a shot too.

We were looking for a quick and easy dinner after a busy day out. I used the microwave like you suggested to cook the potato, so easy and mixed it all in the blender. I also used GF flour but a bit closer to 3/4 cup. Everyone in the family loved it and my youngest is requesting these for her birthday dinner (in September) . We had an omelette on the side so I also didn’t put the full cinnamon and vanilla amounts it. Yummy.

i would think so. Haven’t tried these specifically but often freeze waffles (broken in half) and then just pop them in the toaster to reheat.
