After finding this recipe, it’s all I thought about all day; I was eagerly awaiting lunch! Mexican food (especially healthified) is my absolute fave, and your meal sounded exactly like something I would cook…cumin, cayenne, black beans, quinoa, sweet potato, etc….all daily staples for me. I added lime juice as well. Savory is the way to GO for sweet potatoes!!! Thanks!
