I first shared these Slow Cooker Honey Garlic Chicken Thighs almost 8 years ago and they’re still one of my go-to crockpot meals. When I first made this recipe, it got the seal of approval from hubby and son and then I made it for my parents and my mom asked for the recipe because my dad loved it so much. I passed it on to several friends before I even put it on the blog and continue to share it regularly. My daughter loves it because carrots and sweet potatoes are her favorite.

Can you freeze this honey garlic chicken thighs crockpot recipe?

This has become my go-to recipe to deliver to new moms or friends who have had surgery, have a sick kid etc. You can easily throw everything in a ziploc bag and deliver it and then they can either dump it in the crockpot to make it immediately or stick it in the freezer for later.

Should I use boneless skinless chicken thighs or breasts?

This recipe uses chicken thighs. You could make it with chicken breasts. I encourage you to try it at least once with thighs. They do so well in the slow cooker, never drying out like chicken breasts are sometimes prone to do.

Could I use boneless breast tenders?

I wouldn’t recommend tenders for this recipe. Because they’re cooking for a while in the slow cooker, thinner/smaller cuts like tenders would likely end up overcooked and rubbery.

How To Prep Honey Garlic Chicken Thighs for the slow cooker

If you want to prep this ahead of time, just put all of the ingredients in a Ziploc bag.

From there, you can freeze and when you’re ready to use, thaw the night before and throw in the crockpot before work. Or stick the bag in the fridge overnight, dump it into the crockpot in the morning and turn it on.

  • 1 large sweet potato, chopped
  • 23 large carrots, peeled and chopped
  • 2 pounds boneless, skinless chicken thighs
  • 4 cloves garlic, minced
  • 1 Tbsp fresh ginger (i use the paste)
  • 1/4 cup ketchup
  • 23 Tbsp honey or maple syrup
  • 1/4 cup soy sauce
  • 1 cup chicken broth

Instructions

  1. Chop the sweet potato and carrots to roughly the same size pieces and place in the bottom of the slow cooker.
  2. Add chicken thighs.
  3. In a small bowl, whisk together remaining ingredients.
  4. Pour over chicken and cook in a slow cooker on low for about 6 hours.

Pretty simple right? If you aren’t a fan of carrots or sweet potatoes you could probably swap in another veggie, just be aware that some veggies get a bit mushy in the slow cooker. I like carrots and sweet potatoes because they hold their shape well.

Meal Prep Ideas:

  • Serve with steamed broccoli and rice for an easy, balanced meal.
  • Ladle over noodles that were prepped ahead of time.
  • To transform leftovers, chop the chicken and veggies smaller and use to make fried rice.
  • Prep double and freeze half for later.

Can you make honey garlic chicken thighs in the instant pot? Can you stack chicken thighs in the instant pot?

Yes! You can easily make this recipe in the Instant pot. Just combine all the ingredients in the Instant pot and cook in manual mode for about 15 minutes. The size, thickness and type of chicken used will determine cooking time but you should be able to shred them easily with a fork.

You can stack chicken thighs 2 high in the instant pot but if you have more than that I would cook in two batches.

What type of chicken thighs should I use for instant pot chicken thighs?

I prefer boneless, skinless chicken thighs. You could try bone-in if you wanted to but I tend to prefer boneless/skinless for slow cooker and instant pot recipes and bone-in chicken with skin when cooking in cast iron on the stove or in the oven.

What setting do you cook chicken on in an Instant pot?

I use manual mode. It allows you to set the timer for the exact number of minutes you want to cook something for!


Can I put raw chicken in the slow cooker?

Yes! Slow cookers are designed to cook meat at a low temperature over a period of several hours. In most cases, chicken will cook in the slow cooker on low heat in 4-6 hours but you can leave it in there longer.

You’ll know it’s done if you check the temperature with a thermometer or when you can shred it easily with a fork.

Do you have to brown chicken before putting in slow cooker?

No, you do not have to brown chicken before slow cooking. You can! Browning is an easy way to add extra flavor but it can be an extra step and if your slow cooker doesn’t come with a browning option it often means dirtying another pan.

While it’s important in some recipes, I don’t find it to be a necessary step in this recipe.

Is chicken breast or thigh better for slow cooker?

Both work fine. I most often by chicken breasts so I cook with those most frequently and they work just fine. Chicken thighs have darker meat that’s a bit fattier and in many cases this is an asset in slow cooking.

The fat helps keep the chicken moist as it cooks low and slow and for this reason chicken thighs are great for slow cooking.

Is it better to cook chicken on high or low in the slow cooker?

I choose to cook most things in the slow cooker over low heat. Crockpot recipes are designed for cuts of meat the do well when cooked low and slow whereas other cuts of meat do better cooking quickly over high heat like on a grill.

What makes the honey garlic sauce in this chicken recipe?

The sauce is a mix of ginger, garlic, honey, ketchup, soy sauce and chicken broth.

Is this honey garlic chicken thighs recipe super garlicky?

It uses 4 cloves are garlic but you could easily cut back to 2 cloves if you prefer a milder flavor.

Creamy Sweet Potato Chicken Soup

One of my favorite instant pot tricks is that if you cook sweet potatoes chunks long enough, they basically fall apart when you stir them.

I often use this method to make a creamy type soup without the cream. Similarly, you can blend in a can of beans to add extra fiber and protein as well as a creamy texture.

If you decide to make this on the stove top and your sweet potatoes don’t fall apart on their own, feel free to remove the chicken and use a blender or immersion blender to blend up part of the broth to achieve a creamy texture.

The sweet potatoes in this recipe make it creamy while still keeping this recipe dairy-free and gluten-free. If the sweet potatoes falling apart make it too thick, add a little more broth!

Ingredients in Instant Pot Sweet Potato Chicken Soup

Here are a few of the ingredients you need to make this soup:

  • Sweet potatoes – if you don’t have them on hand, try butternut squash, acorn squash or carrots
  • Chicken thighs – feel free to swap in chicken breasts if you prefer.
  • Spinach – this is optional, but fresh baby spinach wilts easily into soups and is a great option for adding more veggies
  • Corn – Feel free to use fresh, frozen or canned corn
  • Seasoning – this is a basic soup recipe and there are tons of great seasoning combinations you can use – try Old Bay, McCormick’s chicken seasoning or a combination of cumin, paprika and cayenne pepper.

How To Make Sweet Potato Chicken Soup

To make this soup, pull out your Instant Pot and follow a few simple steps:

  • Combine all ingredients except the spinach and corn in the Instant Pot.
  • Cook as directed.
  • Remove the chicken and shred it and return to the pot along with the spinach and corn.
  • Serve and enjoy!

Ingredients

  • 1.5 pounds sweet potatoes (approx 2 large or 4 cups roughly chopped)
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1.5 pounds boneless, skinless chicken thighs (or breasts)
  • 1.5 cups chicken broth (more if desired)
  • 1 cup corn kernels (frozen, canned or fresh)
  • 3 giant handfuls fresh baby spinach
  • 2 tsp Old Bay**
  • 1 tsp salt
  • Avocado to garnish (optional)

Instructions

  1. Peel and roughly chop sweet potatoes. You can also leave the skin on if you want to!
  2. Place sweet potatoes, garlic, peppers, chicken thighs, seasoning and broth in the instant pot.
  3. Seal and manually set the timer for 12 minutes.
  4. Quick release. Remove chicken to shred. Use a fork or potato masher to gently break apart sweet potato chunks as you stir. Switch to saute, return chicken to pot and stir in corn and spinach.
  5. Let simmer 2-3 minutes, taste, adjust seasonings and serve. If you want to thin it out a little, add an additional half cup of broth.

Notes

**If you don’t have Old Bay, try swapping in Montreal Chicken Seasoning or 1 tsp cumin, 1 tsp paprika and 1/2 tsp curry powder.

To make it in the slow cooker, increase broth to 2 cups, cook in low for 6-8 hours until sweet potatoes break apart easily. Add spinach and corn for last 15 minutes.

What can I substitute for sweet potato in chicken soup?

If you don’t have sweet potato, squash is a great option. Butternut squash, acorn squash or other similar squash with the peel removed will act similarly to sweet potato in this recipe. You could also use carrots but they don’t fall apart as easily and you’ll likely need to blend them by hand to make it creamy.

Is soup with chicken and sweet potatoes healthy?

Yes! This soup is packed with protein and vegetables and makes a great complete meal on a cold day. Sweet potatoes are a great source of Vitamin A and C. You can leave the skin on to add fiber. The spinach adds more Vitamin A and iron and the chicken adds protein.

Can you freeze Instant Pot chicken and sweet potatoes?

Yes! Let cool and then portion into containers like Souper Cubes (aff link) to freeze for later. This soup can be reheated in the microwave or on the stove top.

You could easily double this recipe and freeze half!

What to serve with chicken sweet potato soup?

This soup is fine on its own, but would be great alongside crusty bread and a side salad for a healthy, balanced meal!

Do I have to garnish with avocado?

No! I love to use avocado as a soup garnish because it blends right in with its mild flavor and adds some healthy fats but feel free to skip it. You could add some fresh herbs or cheese on top if you want to!

To make this easy recipe, you just need a few basic ingredients. Here are a few of them:

  • Rump roast – You can also use chuck roast if you prefer.
  • Worcestershire sauce – A flavorful liquid used to deglaze the pan and get all the flavorful brown bits which deepens the flavor of the sauce.
  • Garlic and onion – The thinly sliced onions mix well with the shredded beef and add great flavor to the sandwiches.
  • Beef Broth – The base of the dipping sauce
  • Provolone cheese- This is my favorite cheese for this sandwich but feel free to use whatever your favorite is

How To Make French Dip in Crockpot

To make crockpot French dip sandwiches:

  • Season and sear the roast.
  • Deglaze the pan and saute the onions.
  • Transfer the roast and onions to the crockpot.
  • Add beef broth and spices and cook 8-10 hours.
  • Shred the beef.
  • Reduce the liquid to make a dipping sauce.
  • Place on buns, top with cheese and broil until cheese is melty.
  • Serve with dipping sauce.

Crockpot French Dip Chuck Roast

If you can’t find rump roast, chuck roast is a great option for this recipe as well. Rump roast tends to be a bit more expensive and more tender which chuck roast is from the shoulder area. Chuck roast is slightly fattier but both are good options for this sandwich.

This Crockpot French Dip recipe is protein-packed, full of flavor and easy to make. The perfect dinner for a cold night!

Ingredients

  • 23 pound rump roast (or chuck roast)
  • 1 tsp each salt and pepper
  • 2 Tbsp oil
  • 1/4 cup Worcestershine sauce
  • 3 cloves garlic, minced
  • 1/2 a medium onion, thinly sliced
  • 2 cups beef broth
  • 1 tsp paprika
  • 1 tsp parsley
  • 1 tsp onion powder
  • Sub buns
  • Sliced provolone cheese

Instructions

  1. Heat oil in a large pan (or crockpot if you have a saute function).
  2. Season roast with salt and pepper on both sides.
  3. Sear roast for 3 minutes on each side. Remove and set aside.
  4. Deglaze pan with Worchestershire sauce.
  5. Add garlic and onions and saute for 5 minutes.
  6. Place onions and roast in a crockpot.
  7. Add beef broth and seasonings and cook on low for 8-10 hours.
  8. Remove roast and shred using 2 forks.
  9. Pour juice into small saucepan. Bring to a boil and let reduce for 10 minutes.
  10. Place shredded meat on buns. Top with cheese. Place under broiler until cheese is melted.
  11. Serve with sauce for dipping.

These sandwiches pair well with a side of vegetables. Keep it easy with Steamfresh veggies, or toss some green beans or broccoli in the oven to roast while the sauce is reducing. You could also serve with a side salad and some fresh fruit.

How to store crockpot French dip beef?

Store the shredded meat in a glass container in the refrigerator for up to 4 days. You can reheat in the microwave or under the broiler.

How to freeze this slow cooker French dip beef?

Portion shredded beef into 1 or 2 cup servings and freeze once cooled. Freeze the dipping sauce in a separate container. For individual sauce portions, try freezing in muffin tins into broth cubes and defrost as needed.

Can I make instant pot French dip sandwiches?

I haven’t tried it myself but it should work. Follow the above directions but when ready to cook, put everything in the pressure cooker and cook for about 90 minutes. Let pressure release naturally and then shred. Cooking time for the instant pot will depend on the weight of your roast and the thickness so if it doesn’t shred easily with two forks, it needs to be cooked longer.

If the cold weather is here to stay where you are, you have to try this Crockpot Chicken Taco Soup.

Chicken is my protein of choice for this recipe because you don’t have to cook it ahead of time like you do with ground meats. This recipe is also a great way to repurpose chicken that you’ve already cooked when you’re looking for a new meal idea mid-week.

Ingredients For Chicken Taco Soup

Most of the ingredients you need for this soup can probably be found in your pantry! Gather up:

  • Onion and bell pepper
  • Fire-roasted tomatoes – these add extra flavor but if you don’t have them, regular diced tomatoes or even Rotel is fine!
  • Black beans
  • Green chilis – Mild works fine but feel free to use hot to add a little extra spice
  • Corn
  • Chicken – I use boneless, skinless chicken breast
  • Broth- Chicken or vegetable broth are both great
  • Spices- Be generous with your seasonings – we use a mix of cumin, paprika, chili powder, garlic powder and salt but you could also use taco seasoning in a pinch
  • Toppings – tons of options including things like fresh jalapenos, shredded cheese, tortilla chips, fresh cilantro, sour cream and more!

I’ve got a super easy crockpot recipe to share with you guys today and I have been loving it for the past few weeks. About a month ago I got a craving for potato soup. As usual, life is busy and I am always looking for shortcuts and for this recipe, like so many others, this comes in the form of frozen veggies.

I use frozen mixed vegetables all the time in recipes like:


Easy Crockpot Potato Soup with Frozen Hash Browns

The secret to making this recipe super easy is frozen hash browns, specifically diced hash browns. If you’re not a hash brown lover, you might not know that frozen hash brown potatoes are basically just frozen potatoes that have already been cut for you!

So all you have to do is dump them in the crockpot. They’re the perfect size for soup and they’re all evenly sized.

How To Make Slow Cooker Potato Soup with Hashbrowns

There are two parts to making this soup:

  • Cook the potatoes and other veggies in the crockpot.
  • Puree most of the soup to get a creamy consistency.
  • Add in things you wouldn’t want to be pureed like chicken sausage and green onions and serve!

Can I use regular potatoes?

You can absolutely use regular potatoes. Just be sure to dice them all the same size and fairly small so they cook nicely in the crockpot. Peel them or leave the skin on. Totally your preference.

Do I have to add carrots?

No, you don’t have to add carrots. I’m just of the opinion that if I’m going to puree something anyway, I might as well throw some extra veggies in there since you probably won’t notice. I did test this once with cauliflower rice instead of carrots and it was fine, especially if you like cauliflower. But I prefer carrots and I often add a red bell pepper as well.

How do I make vegetarian crockpot potato soup?

To make this vegetarian just leave out the sausage at the end. You can easily add a can of white beans to the soup along with potatoes and carrots. They’ll blend up nicely. I use that trick in my Leftover Turkey and White Bean Soup.

Crockpot Loaded Potato Soup with Hash Browns

Adding corn and chicken sausage to this recipe gives it a little twist on the classic potato soup recipe. I love blending the potatoes to make it creamy but also love adding some additional mix-ins to give the soup some texture.

I add chicken sausage for protein but you could also add some beans or some shredded rotisserie chicken. I prefer green onions to white so I mix those in at the end. If you’d like, you can add diced onions at the beginning and just garnish with a few green onions at the end.

How to make classic loaded potato soup in the crockpot?

If you’d prefer to make a more traditional version, you can skip adding the corn and sausage and stir in some heavy cream and cheese and then top with more cheese, bacon and green onions. Or try one of these recipes:

Ingredients

  • 5 cups diced hash brown potatoes
  • 2 cups frozen carrots
  • 3 cups chicken broth
  • 1 can green chilis
  • 1 tsp garlic powder

  • 1/21 tsp cayenne
  • 1 tsp salt
  • 4 chicken sausages, sliced
  • 1 can corn
  • 3/4 cup sliced green onions

Instructions

  1. Combine the potatoes, carrots, chicken broth, green chilis, garlic powder, paprika, cayenne and salt in a crockpot and cook on low for 6-8 hours.
  2. Transfer half to three-quarters of the soup to a blender and blend until smooth. Or use an immersion blender right in the pot to blend to desired consistency.
  3. Pour back into the crockpot and add chicken sausage, corn and green onions. 
  4. Add a little more broth to thin it to your desired consistency if needed and cook an additional hour or two. 
  5. Taste and adjust seasonings before serving if needed. You may want to add more salt or make it spicier with more cayenne pepper.

Notes

Pureeing the soup is optional. If you prefer a chunkier soup you can skip that step but it will be more broth-based vs creamy. You can also use an immersion blender if you have one.

Can I make crockpot potato soup with bacon?

Yep! I personally think the bacon would be best as a topping. I would cook it separately and then dice it up and add just before serving. If you want to add it at the beginning, I would still cook it first before adding to the slow cooker. Here’s a recipe for Slow Cooker Potato Soup with Bacon.

To make this recipe vegan, swap chicken broth for vegetable broth and leave out the chicken sausage. For protein you could add in a can of white beans or even try some lentils or vegan sausage.

Yes! This soup works with any time of diced frozen potatoes, not just hashbrowns. You could look for frozen diced and peeled white potatoes or something like Simply Potatoes Diced Potatoes as well.

Can I make potato soup with shredded hash browns?

Yes! You don’t have to use a diced potato for this recipe although it’s what I prefer. If you like the texture of shredded potatoes, they’re totally fine to use. Since you’re blending up a lot of the soup anyways, the shape doesn’t matter too much.

Use potatoes, broth, green chilis, salt and chicken sausage for a super simple potato soup option.

What makes this a creamy potato soup with hashbrowns?

There’s no actual cream in this recipe, although you could add some if you wanted to. When you use a blender or immersion blender to blend most of the potato mixture, you’ll get a thick, creamy soup with a velvety texture, no need to add any cream!

Let’s talk about this Instant Pot Lasagna Soup! It’s all the goodness of lasagna without all the time spent layering! For this version, we’re using lentils- one of my favorite vegetarian protein sources. They cook quickly and don’t have a strong flavor.

If you’re looking to transition more plant-based meals, one of my favorite places to start is by replacing ground meat with lentils. They are similar in size and shape to crumbles of cooked ground meat and pairing them with finely diced mushrooms can help add a bit of heartier/meatier texture.

Instant Pot Lasagna Soup

Lasagna soup is just as it sounds – all the goodness of lasagna, in soup form…so you don’t have to worry about cooking, layering, putting in the oven, etc. Just dump everything in a big pot and voila! When I served this to my husband, he said he definitely couldn’t tell it was meat-free, which I think is the goal for a lot of people serving plant-based meals to meat-eaters.

Best Lasagna Soup Recipe Ingredients

To make this soup you just need a few basic ingredients:

  • Lentils – start with dry brown or green lentils.
  • Onion & garlic – adds flavor
  • Mushrooms – add a bit more “meaty” texture”. I typically use baby portobello but white mushrooms are fine too.
  • Chopped frozen spinach – no need to thaw ahead of time. You can also skip this and mix in fresh baby spinach after cooking
  • Lasagna noodles – break them into a pieces before adding them to the pot
  • Pasta sauce – use your favorite!
  • Broth – vegetable broth to keep it vegetarian or chicken broth is fine too
  • Cheese – I use ricotta and shredded mozzarella. You could also mix in some freshly grated parmesan at the end

Making this soup in the instant pot really couldn’t be easier:

  • Add all the ingredients to the Instant pot except the shredded mozzarella cheese.
  • Cook for 8 minutes.
  • Release the pressure, stir in the shredded cheese and serve!

This Crockpot Creamy Mexican Chicken recipe is for those of you requesting more crockpot recipes. It is SO easy to throw together the night before or the morning you want to make it. Or you could easily make it a freezer meal by tossing everything but the cream cheese in a ziploc bag and sticking it in the freezer until you need it.

Mexican Shredded Chicken in the Crock Pot

This dinner gets most of its flavor from the spices so feel free to really amp them up! Taste test and add more at the end if you want. You can make it mild or spicy by choosing the spice level of your salsa, peppers and chilis. If you’re a cilantro lover, mix a bunch of fresh cilantro in at the end. If you hate cilantro, leave it out! Want it creamy AND cheesy? Add a few handfuls of cheese after it’s done cooking. Or leave it out. Serve it over rice or farro, or cauliflower rice…or just by itself with some chips for scooping.

How to make slow cooker pulled Mexican chicken

Making this recipe couldn’t be easier thanks to the slow cooker. All you need to do is:

  • Pour the salsa on the bottom of the slow cooker
  • Add remaining ingredients except cream cheese and stir to combine
  • Top with cream cheese.
  • Shred the chicken and stir in the cream cheese.
  • Serve however you want to!

Instant Pot Mexican Chicken

You could try this as Instant Pot Creamy Mexican Chicken if you want to but I would probably make a few adjustments. I would add about half a cup of chicken broth and leave out the cream cheese. Cook for 10-15 minutes, depending on the thickness of your chicken breasts. Shred the chicken, then add the cream cheese. Rest the cover on top and let it sit on the warm setting for 10 minutes or so until the cream cheese warms enough to mix in.

Crockpot Mexican Chicken Soup

If you wanted to turn this into a soup, you could do so by adding chicken broth. The cream cheese will still make it creamy but the broth will add liquid to make it more soup-like so you can easily eat it with a spoon.

Slow Cooker Mexican Chicken is super flexible and you can’t really mess it up! The best kind of recipe in my opinion.

Ingredients

1 cup salsa
1.5 pounds chicken (breasts or thighs)
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn, drained and rinsed
1 red pepper, diced
1/2 cup diced onion
1 jalapeno or serrano pepper, minced (optional)
1 Tbsp cumin
1 Tbsp chili powder
2 tsp paprika
1 (4.5 oz) can diced green chilis, optional (hot or mild)
8 oz cream cheese
Optional mix-ins: shredded cheese, avocado, fresh cilantro
Rice, farro or cauliflower rice for serving, optional

Instructions

  1. Pour salsa onto bottom of slow cooker.
  2. Add remaining ingredients (except cream cheese) and stir to combine.
  3. Place cream cheese on top.
  4. Cook on low 4-6 hours until chicken shreds easily with a fork.
  5. Shred chicken and stir to mix in cream cheese. You can also mix cream cheese in about halfway through.
  6. Top with avocado, cheese, cilantro, additional salsa etc if desired.
  7. Serve over rice, farro or cauliflower rice if you want to!

Notes

To freeze, combine all ingredients except cream cheese in a ziploc bag and freeze. When ready to make, thaw in the fridge overnight, dump in slow cooker, top with cream cheese and cook as directed.

You could probably make this in the instant pot although I haven’t tried it myself. You’d just need to add 1/2 cup or so of chicken broth and probably remove a little bit of liquid before shredding and stirring to mix in the cream cheese.

So there you have it! So easy and so delicious!

Can you freeze this creamy Mexican chicken and rice?

Yes. There are a couple of ways you could freeze this. Make as directed, cool and portion into Souper Cubes (aff link) or Ziploc bags to freeze. Or you could mix all the ingredients except cream cheese in a Ziploc bag and freeze before cooking. Then thaw in the fridge overnight, add to the crockpot and top with cream cheese. If you’re serving with rice, you can make and cool the rice and then freeze it separately.

What’s the best way to season Mexican chicken (Best spices for Mexican chicken)?

I love all the seasonings in this recipe. The cumin, chili powder and paprika go well together. You could also try taco seasoning to replace some or all of those spices. The jalapenos and green chilis are an easy way to add spice if you want it! And fresh cilantro at the end adds even more flavor.

I’ve got a new slow cooker recipe for you! I’ve been on a mission lately to find some delicious ways to enjoy quinoa. A few recipes I’ve developed so far and make often include:

Since we’re deep into the middle of winter, I knew I wanted to test out some casserole-style recipes since they’re easy to make and they’re warm and comforting on cold nights.

Chicken Enchilada Casserole with Quinoa

This slow cooker casserole is a new favorite of mine. The best part about it is that it truly is a set-it-and-forget-it meal. Just dump all of the ingredients in, give it a stir and let it cook.

Here’s all you need to make it:

  • Quinoa- uncooked. I like to rinse mine first.
  • Black beans – drained and rinsed
  • Corn – I use canned but frozen is fine
  • Diced tomatoes – I use plain diced tomatoes but you could also use Rotel
  • Diced green chilis – choose mild or hot depending on your spice preference
  • Chicken broth
  • Enchilada sauce – use your favorite brand. I use a 16 oz jar. If you’re using 10 oz cans, I would use two and reduce the chicken broth by 1/4 cup.
  • Cumin, chili powder, garlic powder and salt
  • Shredded cheese – I use colby jack but you could use cheddar or even pepper jack

How To Make Chicken Quinoa Enchilada Bake in the Crockpot

To make this slow cooker casserole, simply combine all ingredients except the cheese in the crockpot and stir well. Cook on low for about 6 hours, then shred the chicken and stir in the cheese before serving!

Here’s the recipe I use. It’s very forgiving so feel free to add some extra veggies or double the beans and skip the chicken etc to meet your family’s needs.

This slow cooker chicken quinoa enchilada casserole is perfect for lunch or dinner on a busy week. Or enjoy some now and freeze half for later.

Ingredients

  • 1.5 pounds boneless, skinless chicken breast
  • 1 cup quinoa, uncooked
  • 1.25 cups chicken broth
  • 16 oz enchilada sauce *
  • 1 (15.5oz) can corn, drained
  • 1 (14 oz) can diced tomatoes, drained
  • 1 (15.5oz) can black beans, drained and rinsed
  • 1 (4 oz)can diced green chilis
  • 1 Tbsp cumin
  • 1 Tbsp chili powder
  • 1 Tbsp garlic powder
  • 1 tsp salt
  • 1.5 cups shredded cheese (I use Colby Jack)

Instructions

  1. Combine all ingredients except the cheese in a crockpot.
  2. Stir well.
  3. Cook on low for 6 hours. 
  4. Shred the chicken and stir in the cheese before serving

Notes

* I use a 16 oz jar of enchilada sauce. If you’re using a 10oz can, I would use 2 cans and reduce the chicken broth to 1 cup.

Make this spicy by using spicy enchilada sauce and hot green chilis or keep it mild.

Can I freeze slow cooker chicken quinoa enchilada casserole?

Can you make this slow cooker quinoa enchilada recipe vegetarian?

You can easily leave out the chicken in this recipe and use vegetable broth instead of chicken broth. Try adding another can of black beans or some pinto beans for variety.

Can you make this recipe in the instant pot?

I haven’t tried this recipe in the instant pot yet but you could try this recipe for Instant Pot Quinoa Enchiladas.

Can I add other vegetables to the quinoa enchilada casserole?

Absolutely. Some diced peppers and onions would make a great addition.

Hi friends!

Soup season is here! As the weather starts to get colder, I always crave soup and this Sweet Potato Chicken Chili is a forever favorite. I’m not a huge ground beef fan so traditional chili isn’t my favorite but I love this twist because it incorporates some of my favorites. I also love it because like a lot of soups, it gets better as it sits, so making a huge batch on Sunday and eating it for lunch or dinner all week long works out well. If you’re not a fan of red chili, try my White Chicken Chili!

Chicken Chili with Sweet Potato

Here are the ingredients:

  • Onion – White or yellow work best
  • Black beans – Look for a low-sodium can or give them a good rinse after draining
  • Sweet Potato – Leave the peels on! You won’t even notice them. And make sure to dice into evenly-sized chunks.
  • Corn – I usually use frozen corn but fresh or canned would also work
  • Diced canned tomatoes – I prefer the no-salt-added variety so I can salt the whole soup to taste
  • Spice – paprika, chili powder and cayenne can all be adjusted to your taste preferences
  • Chicken – chicken breasts or thighs work for this recipe
  • Broth – Use chicken or vegetable broth
  • Toppings – I top mine with avocado, cheese and tortilla chips

Chicken Sweet Potato Chili Slow Cooker

This is a great soup for pulling out your slow cooker. Just throw everything but the toppings in and give it a good stir. Then cook on low for about 6 hours, shred the chicken and serve with toppings

Chicken Sweet Potato Chili Instant Pot

If you’d prefer to make it in the Instant pot, cook time will depend on the thickness of your chicken. Start with 15 minutes and then check to see if the chicken shreds easily. If not, restart for a few more minutes.

 

Sweet Potato Chicken Chili

I actually made this soup on a whim. Turns out it was so good that I immediately made a second batch to photograph and share with you guys. I’ve made it both in the Instant Pot and the slow cooker and it turns out great either way. The great thing about chili is that it’s pretty hard to screw up. Like most soups, you basically just throw what you have on hand in a pot, add some seasonings and serve. Plus you can easily adjust this recipe to make it fit your dietary preferences.

Turkey Sweet Potato Chili

In this sweet potato chili turkey or beef (ground) can be substituted for the chicken, however, I would cook the ground meat first before adding to the slow cooker or instant pot and reduce the cooking time in the Instant Pot to about 10 minutes.

No Bean Sweet Potato Chili (Quinoa and Sweet Potato Chili)

Not a fan of beans, no problem! You can still enjoy this chili. Just swap the black beans for cooked quinoa or farro! They’re both a great source of nutrients that will add protein and fiber just like beans do but may reduce the intestinal discomfort beans can cause some people.

Sweet Potato Chili Recipe Vegetarian

Another option would be to leave the beans and swap chicken for cooked quinoa or tempeh for an easy sweet potato chili recipe vegetarians will love.

Ingredients

  • 1/2 cup diced onion
  • 1.5 cups black beans (or one can drained)
  • 2 cups diced sweet potato
  • 1 cup frozen corn
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 (14.5 oz) can no-salt-added diced tomatoes
  • 2 Tbsp chili powder
  • 1 tsp cayenne pepper, optional
  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 cup chicken broth
  • optional toppings: chips, cheese, avocado

Instructions

Combine all ingredients (except optional toppings) in the instant pot or slow cooker.

Option 1: Use the manual button on the instant pot to cook for 12-15 minutes depending on how thick your chicken breasts are. I usually let the pressure release naturally but if you’re in a hurry you can do manual release. If the chicken doesn’t shred easily, cook a few minutes more.

Option 2: Cook in the slow cooker for about 6 hours on low or until the chicken shreds easily.

Add toppings and serve!
